Healthy Bread Pudding

There are many bread pudding recipes out there.
But most of them require whole milk, heavy cream and butter.
And these ingredients make bread pudding soft, creamy and tasty.
But at the same time, they make bread pudding a high calorie item.
So, in search of a recipe that does not use butter or heavy cream,
I found one that uses soy milk and very little sugar.



INGREDIENTS:
2 slices of whole wheat bread (or any kind of bread), cut into cubes
1 egg (you may use 2 eggs, but it was too 'eggy' for me)
1 cup soy milk or regular milk(I used unsweetened soy milk)
1 tbsp sugar(you can use more, but 1 tbsp was just right for me)
dash of cinnamon powder
nuts(almond, pecan, walnut)-optional
raisins -optional
vanilla extract - optional

HOW TO:
1. Heat oven to 375.
2. In a oven proof container, combine cubed bread, raisin, and cinnamon: mix well.
3. In a bowl, beat the egg, and stir in sugar and vanilla extract.
And whisk in soy milk or regular milk.
4. Add egg mixture over the bread mix.
5. Bake in preheated oven for 25-30 minutes or until when knife inserted comes out clean.

Serves 2
I used 2 crusty end pieces of bread. So, it looks darker than normally it would.

It really hits the spot in cold mornings.
