Spinach Salad with Red Onion Dressing

Eating raw spinach was somewhat foreign to us at first when
our son introduced spinach salad to us.
But with freshly home made dressing, it did not take long to find out how awesome this salad is.
RECIPE:
INGRIDIENTS:
1/2 lbs Baby Spinach
and
(your choice of vegetables)
1/4 sliced Red Onion
2-3 sliced Mushroom
2 Cooked Eggs sliced or crumbled
2 slices of Bacon cooked and crumbled
Cherry tomatoes
Dressing:
2 TBS minced red or sweet onion
3ts Dijon Mustard
1/4 Cup Olive oil
2 TBS Sugar
2 TBS Vinegar(I used Apple Cidar)
Pinch of Salt
Some Pepper
Chill and Serve!
